Red Gold Simple Gourmet Lasagna Party with Laura’s Lean Beef Sweepstakes 2/3 Daily

I was given a Red Gold & Laura's Lean Beef Lasagna making kit so I could make my own Lasagna for my family. I thought the kit was perfect and it had almost everything I needed for making my Lasagna.

We cooked up the Laura's lean beef with onions and garlic. Then we let the meat cool while the lasagna noodles cooked.

While the lasagna noodles were cooking my mom made up her lasagna white sauce topping. I know she used Ricotta cheese, eggs, a little cream and the rest is a family secret lol

DSCN0889We then mixed our sauce up with the Red Gold tomatoes and added the cooked meat. Next we laid out the lasagna noodles to cool before filling.

DSCN0892We took the red sauce with the meat and spread it out over the lasagna noodles. Then we rolled the noodles and placed them in the dish. If you have a deep dish you can do a few layers of these rolls.

DSCN0906After we finished filling and rolling the noodles we topped the lasagna with the white sauce. You then can add shredded cheese to the top too if you want to. Place in the oven at 350 for about 45 minutes and serve. My family loves this dish and everyone thought the dish was still great with the items that were given to us to try out.

Penne Carbonara, Serves 4-6

Ingredients:
•    1 pound Colavita Penne Rigate
•    1 tablespoon Colavita Extra Virgin Olive Oil
•    ¼ to ½ pound thick sliced bacon, diced
•    2 cloves garlic, minced
•    3 large eggs
•    Freshly ground pepper
•    1 cup freshly grated Parmesan cheese

Preparation:
1.    Cook the penne according to package directions. While the penne cooks, heat the oil in a large skillet; add the bacon and garlic; sauté until the bacon just begins to brown.
2.    Do not over cook the bacon; if it gets too crisp it will not blend well with the penne.
3.    Beat the eggs in a large serving bowl; season well with pepper. Once the penne is cooked, drain it, reserving ½ to 1 cup of the cooking liquid.
4.    Put the hot penne immediately into the bowl containing the beaten eggs and toss well to coat. Add the bacon along with ½ cup grated cheese.
5.    Toss; adding a little pasta water if the mixture seems too dry. Serve immediately in warmed bowls; passing additional cheese.

DSCN9954While the Colavita Penne Rigate was boiling, my mom browned the chopped up bacon with the Colavita Extra Virgin Olive Oil and minced garlic. This process took about 15 minutes and is very easy to do. Cooking the bacon on a low heat ensures that you don't over cook the bacon. Plus less oil gets splattered.

DSCN9958I don't know about you, but I like to let my bacon sit for a few minutes on paper towel to let the grease drain off. This really helps a lot with my acid reflux. While the bacon set we added in our pepper to the beaten eggs.

DSCN9953We measured out a half cup of freshly grated Parmesan cheese to mix in with the hot Colavita Penne Rigate. We drained the noodles and kept a cup of the hot noodle water on hand. We then mixed the hot noodles, bacon and cheese into the eggs while mixing thoroughly. We only needed to added a little of the water that we kept.

DSCN9964We then placed everything in a serving dish and added a half cup of Parmesan cheese to top it off. My family loved the Penne Carbonara, which I have never had or made before. I am very happy with all the Colavita products and glad that I got to learn about a new product and new recipe. I can't wait to see what else I or my mother cooks with the rest of the Colavita items.

Banana Walnut Bread

Banana Walnut BreadMoist and delicious Banana Walnut Bread is a simple recipe that is timeless! A true crowd pleaser! I only have one issue with this recipe! I make it to give away and end up eating it.

Ingredients:

3 Very Ripe Bananas

1/3 C. Melted Butter

3/4 C. Sugar

1 Egg, beaten

1 tsp. Vanilla Extract

1 tsp. Baking Soda

Pinch of Salt

1 1/2 C. of all-purpose Flour

1/2 C Walnuts, chopped

Preheat oven to 350F and butter a 4×8-inch loaf pan.

In a large mixing bowl, mash the ripe bananas with a fork.

Use a wooden spoon to stir the melted butter into the mashed bananas.

Mix in the baking soda and salt. 

Stir in the sugar, beaten egg, and vanilla extract.

Mix in the flour.

Fold in the chopped walnuts.

Pour batter into prepared loaf pan. Bake for 1 hour at 350F or until a tester inserted in the center comes out clean.

Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve.

Mom’s All Homemade 4th of July Cookout

Table all setMy mom loves to cook and bake. When ever there is a holiday my mom will have us over for dinner. Everything my mom makes is all homemade and you can taste it. This time my mom had my extra camera and did step by step pictures, so I could do a post on my site. The following is all pretty much my mom's work. I am just putting the post together for her. My mom will show you how to make Potato salad, Macaroni salad, Pistachio pudding salad and quick and easy corn on the cob.

Potatoe Salad6 to 8 Potatoes boiled in their skins — cool to room temperature then refrigerate in their skins ( this keeps the starch in the potatoes )
6 to 8 eggs boiled, peeled refrigerated

Salad saucePotato Salad:
Peel potatoes and cube
Slice eggs in half, put yokes in food processor for silky smooth sauce (keep 2 eggs to slice over top of the finished salad)
pulse the yokes till they are fine crumbles then add:
1 cup mayo
2 tablespoons mustard
1 teaspoon garlic salt
Pulse to combine into a silky sauce
salt and pepper to taste
Add sliced celery, radishes and minced onions to taste. I like a lot of veggies so I slice at least 4 or 5 ribs of celery, 3 radishes and I mince up about 1/2 onion really fine so my picky daughter cannot see it!!
Gently stir all together in a really big bowl – slice the 2 remaining eggs and lay on top then sprinkle with paprika

Potato SaladMacaroni Salad:
Same sauce as for potato salad
Boil 1 – 16oz. box of any shape pasta and cool ( do not rinse ) We need the starch on the pasta.
Boil eggs, peel and refrigerate then follow steps as above
I add the same veggies as for potato salad, then add 1/2 pound of cubed ham and 1/4 pound of cubed Colby/Jack cheese
Stir gently and top with slice eggs, dust with paprika

Macaroni SaladKeeping the starch in the potatoes and on the pasta helps to prevent the salads from getting watery. Remember: if you have a picky eater that you must chop the veggies very small, my picky girl is 34 years old and hates her veggies !! Hope you enjoy these.

Pistachio Pudding SaladPistachio Pudding Salad:
1 small box instant pistachio pudding mixed well with 1  lg.can of crushed pineapple and the juice
than add 3/4 cup finely chopped pecans, a large amount ( 1/2 bag) of mini marshmallows multi colored is my daughters favorite and 8oz. of cool whip. Stir gently and put in serving vessel. For those of us old enough – this used to be called the WATERGATE SALAD.

Pistachio Pudding SaladMicrowave cornNow for the corn on the cob. After you husk your corn and clean it you can wrap it plastic wrap. Make sure to cut strips of paper towel for easy opening. Do not, I repeat DO NOT put butter on the corn. If you do the plastic wrap will melt. After your corn is all wrapped you can put it in the microwave. You microwave for 3 minutes then turn it and go for another 3 minutes and then serve. The corn is done to perfection.

BBQ chickenMom's secret to the perfect BBQ chicken is to par boil it first and while still warm put it in a sealable dish and seal it with your BBQ sauce. When the chicken cools it will suck the sauce in. Then you put it on the grill to warm it up and to give it that grilled taste.

Hubby & IAfter dinner we went downtown to watch the fireworks. The day was great and I was able to spend quality time with my family and friends

Fresh Homemade Apple Pie #freshfuitbowl #BBBProduct

Apple pie

I was asked to make a fresh fruit item to introduce the new Fresh Fruit Bowl that is being sold exclusively at Bed Bath & Beyond. I asked my mom what she wanted to make with me and she said an apple pie. So I went out and bought the apples and pre made pie crusts.

crustI unrolled the pre made pie crusts and put them in the pie pans while my mom was peeling and cutting up the red and green apples. To keep the apples from turning brown we put them in cold water with lemon juice.

apple fillingMy mom mixed up the apple pie filling. Then my husband put the filling in the pie pans. I loved having my husband helping my mom, I was then free to take pictures. Plus I thought it was cute seeing my husband in the kitchen with my mom.

Apple Pie Filling:

6 cups thinly sliced, peeled apples (4 medium red & 4 medium green)
3/4 cup sugar
2 tablespoons all-purpose flour
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 tablespoon lemon juice

Then my mom and husband drizzled Carmel and toffee sauce on the pies before the crumble topping was put on. This makes the pie taste oh so good.

My husband mixed the ingredients up for the crumble topping while my mom kept adding to it. My husband would think he was done mixing and my mom would add more butter it was so funny to watch.

Crumble Topping:

1 cup brown sugar
1 cup all-purpose flour
1/4 cup butter, diced

carmel drizzelTo finish the apple pies my husband drizzled Carmel sauce on the tops. Then we bake the pies for 40 to 45 minutes or until apples are tender and crust is golden brown at 400 degrees. Cover edge of crust with 2- to 3-inch wide strips of foil after first 15 to 20 minutes of baking to prevent excessive browning. Cool for at least 2 hours before serving.

apple pieThe apple pie was so good and didn't last long in my house. My family loved it and I am glad we were able to make this with my mom. This was a great day that will forever be in my memories.
fruit bowlFor the Fresh Fruit Bowl I thought to use it for what it was made for. My mom and I cut up cantaloupe, watermelon and honeydew melon. To top off all the fresh cut up melon my husband got large grapes to mix in with it. The fresh fruit was a great snack on the warm days we have been having. Everyone loved being able to get a bowl of cold fruit when ever they wanted to snack. The bowl works great and kept the fruit fresh more than a week then it was gone.

Super Simple Cheesy Noodle Casserole

I learned a version of this from my mom and over time I have made many versions of this. I tend to use what ever is sale that week at the store to deiced what version I want to make. I used a box of spiral noodles, a head of broccoli, head of cauliflower, 2 jars of cheese sauce, a pack of smoked sausage, a small pack of ham and a pack of shredded cheese. My family so loves this when I make it.

sscncprepWhile my noodles are cooking in my saucepan, I cut my broccoli and cauliflower into bite size pieces. After cutting the broccoli and cauliflower up, I washed them and let them sit and drain. I then will stir the noodles. Now I will start to cut up my sausage and ham into bite size pieces. By the time I get the meat all cut up my noodles are done.

noodlessscncI will pour the veggies into the baking dish and use the strainer for my noodles. I will drain and rise my noodles and let cool. I usually just put the strainer in the sauce pan and let it sit and drain for about 5 minutes.

sscncI then mix the noodles, veggies, meat and cheese together in a baking dish. I then will bake at 350 for about 20 minutes or until the cheese is all hot and bubbely. I can make this dish in under a hour and my family gets a serving of veggies and love it. The left overs don't last long as my husband packs most up for luch the next day for work.

allinonepanIn a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in taco seasoning, 2 cans re-fried beans and water. Simmer, uncovered, for 5 minutes. Stir in corn and half of a cream cheese brick.

Now you can eat this just as it is, with a flour tortilla, over toast or over chips. This is just a few other ways my family and I love to eat this mix.

ttcasseroleTransfer mix to a greased 13-in. x 9-in. baking dish. Arrange tortilla shells in a single layer to cover the bottom on the dish and put about 2 scoops of mix in the dish and spread out evenly. Sprinkle cheese over the top and repeat the step again. You can do 2 or 3 layers. I do 2 because my family likes more filling than tortilla shells.

ttcasseroleAfter you get your layers done the hard part starts. You now have to arrange Tater Tots in a single layer over the top. I like using small tater hash browns from time to time. I pretty much decide by what is on sale that week. Bake, uncovered, at 350° for 30-35 minutes or until potatoes are crispy and golden brown.
