It all started with one oven, one mixer and a whole lot of love!
In 1998, I started experimenting with Sugar Free desserts that my mom could enjoy. See, she has diabetes and the choices at these times were limited. I set out on a mission to satisfy her sweet tooth. This was no easy task, as she is an exquisite baker and very tough critic.
I kept experimenting with sugar free recipes, baking cakes and muffins – even creating my own butter cream frosting… until one day, my Mom took a bite of my cake and declared it, “Simplesmente perfeito!” (’Just perfect’ in Portuguese). I knew I was on to something when I started to get requests from friends and family who did not even have diabetes….. And The Butterfly Bakery was born.
I got to try the Mini Angel Food cake & Chocolate Chip loaf from the Butterfly Bakery. My family and I could not wait to try the yummy looking bake goods. We had the Angle food cake with ice cream and it tasted great. My family was very please with the cake. The next night after dinner my family & I shared the Chocolate chip loaf cake and we loved it. The two bake goods tasted so good that my family and I did not even miss the sugar. Matter of fact my husband did not believe me until I shoed him the packaging.
